PLANT BASED NACHOS RECIPE

Y'ALL I LOVE A NACHO!

There, I said it! I crave junky food just as much as the next person, but I will say eating plant based and clean has made so many cravings change for me. I used to be a sugarholic, (I've never met a cupcake I didn't like) But now I crave sugar in the form of fruit and of course wine... let's be honest!

One thing I'll never quit is my love of Mexican food, and a good nachos are on top of that list! So I've figured out a plant based nacho that I believe is out of this world and even the pickiest of meat eaters wouldn't know the difference! Please let me know if you make and what you think!

 

WHAT YOU NEED

1 bag of Siete Grain Free Tortilla Chips or any Tortilla Chip that you love!

1 cup of Dairy free Cheese I love Daiya Cheddar Style Sherds 

1 container of Pico De Gallo

1 container of Guacamole

2 Tbsp of Vegan sour cream

1/4 cup of torn Cilantro

1/3 cup of green scallions

 

WHAT TO DO:

Preheat the oven to 400 degrees

Then place the full bag of tortilla ships on an oven safe plate, and  add the Dairy free cheese. (feel free to use more than a cup if so desired)

**Please note that Dairy Free cheese in general take a bit longer to melt than traditional cheeses. (around 10 to 15 minutes to melt but please keep an eye on the chips so they don't burn)

Then pull the nachos out of oven. PRO TIP: If you would like to transfer the chips and cheese to a room temp plate, feel free too. (I always do so guests don't burn themselves)

Next, layer on the Pico De Gallo I spoon it on generously all over the chips. Then, add a scoop of guacamole and a scoop of sour cream. I then sprinkle the cilantro and diced scallions and you've got some yummy plant based nachos!

MY PLANT BASED DIET MUST HAVES

I've gone Hollywood y'all!! I'm KIDDING!!! If you've been following my story on Social Media, I watched the documentary  WHAT THE HEALTH on the 4th of July (after eating my weight in bacon wrapped hot dogs...Keepin' it all the way real. And needless to say it changed my life. So here I am more than 60 days later living that plant based life. I feel better, I have more energy and my skin is clear as can be. I know it's not for everyone, but it's working for me!

The first thing people say when I tell them I'm not ingesting anything animal based (No Dairy, Eggs, Meat, Poultry or Fish) They roll their eyes and go, oh I need so much protein, I can't do that. The irony is, I'm eating more plant based protein now, than I did when I was eating meats/fish So I thought I'd show y'all some of my favorite products that make me keep full and fabulous! (I'm not a spokesperson for any of these products, I just really dig them!)

  Orgain Protein Powder  is Dairy free, with 21 grams of plant based protein and it tastes amazing. Also Costco and Amazon carry it so it's easy to get. I'm a fan of the vanilla, but the chocolate is delicious too!

4th of July Fruit Wands and Celebration Popcorn

I LOVE 4TH of July! I feel like summer has truly started when we get to celebrate with BBQ's and fireworks!  I also love all the fun food that goes with it, that doesn't take all day to make! Here are recipes for two of my favorites that scream 4th of July!! My Stars and Stripes Fruit wands and my Celebration Popcorn.

WHAT YOU'LL NEED!

1 Bag of Mini White Marshmallows

1 Large container of Blueberries

1 Large Watermelon

1 package of wooden skewers

1 Medium Star Shaped Cookie Cutter

Take your wood skewers and start alternating piercing the blueberries and marshmallows onto the skewer all the way up leaving about an inch and a 1/2 of space for you to finish the wand with your watermelon star.

Then slice your watermelon into triangles and use your star cookie cutter, and press down firmly to get your watermelon star. Then gently press into the top of the Blueberry and Marshmallow sticks and Enjoy!

 

 

 Celebration Popcorn is a fun dessert that is a quick as it is yummy!

Celebration Popcorn is a fun dessert that is a quick as it is yummy!

WHAT YOU WILL NEED:

1 bag of white popcorn kernels or 2 bags of microwave popcorn

1 package of white chocolate Candy Melts

1 container of Red, White and Blue Sprinkles

1 package of Treat Cups

  • Pop your popcorn and set aside.
  • Then take the package of Candy Melts and following the microwave melting instructions. (I like to melt mine in a glass bowl, I find it easier to pour out after it's melted.)
  • Take the Popcorn and put it in a container that has a lid so that you will be able to shake it with the white chocolate.
  • Once the white chocolate is melted I drizzle it into the popcorn that is in the container. Please do it sparingly it goes a LONG way! I pour about 1/2 in and then put the lid back on and shake up the popcorn and the white chocolate so it gets an even coating.
  • Then I hand form treat balls to put into the mini treat cups 
  • finish with sprinkles
  • I like to serve it room temperature. you can also refrigerate and serve later.

Kentucky Derby Cocktails of choice

Their are SO many things I love about being from Kentucky, from cheering on the University of Kentucky Wildcats, GO BIG BLUE! To the Bourbon trail, there's nothing that makes Kentucky more universally known than the Kentucky Derby. And the only thing more iconic than the silhouette of the twin spires of Churchill Downs is the world renowned Mint Julep and it's lesser known cousin (but equally as tasty) Lily Oaks....So y'all know I had to give you the recipe! Enjoy!!

Mint Julep Recipe

INGREDIENTS

2 oz. Kentucky Bourbon
1/2 oz. Simple Syrup
3 Fresh Mint Leaves
Crushed Ice

INSTRUCTIONS

Express the essential oils in the mint and rub them inside the glass....That's a super fancy way to say tear the leaves and muddled them. In the same glass, add simple syrup, bourbon, and crushed ice. Stir. Garnish with more ice and fresh mint.

Oaks Lily Recipe

INGREDIENTS 

  • 1 1/4 oz. GREY GOOSE® Vodka                         
  • 1 oz. Sweet and Sour Mix
  • 1/4 oz. Triple Sec
  • 3 oz. Cranberry Juice

INSTRUCTIONS

Pour all ingredients in shaker and and shake thoroughly then pour over crushed ice and  place stemless wine glass,  and garnish with a blackberries and lemon wedge.
